Great Grains deserve Great Dressing

For an easy dressing for farro, quinoa, or barley salad, whisk together the following:

1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
1 Tbs dijon mustard
1/4-1/2 tsp salt
a few grinds of pepper

Pair this dressing with any cold or room temperature grain (already cooked) for a great side or even a main course. This salad also packs well for picnics. I tossed the dressing with quinoa, green beans, black olives and feta for the salad pictured above. Red, yellow, or green bell peppers, peas, cherry/grape tomatoes, and artichokes also work well with grains. If you have any other combos you like to use with your grains, please let me know!
